Vadouvan spice blend is also known as French masala. It originated in Pondicherry, an Indian city that was ruled by the French for 280 years. The spice blend combines onion, garlic and mustard with fragrant Indian spices.
Use vadouvan spice to flavour Southern Indian curries and dahls. It’s typically added at the end of cooking, like garam masala. The flavours of fenugreek, cumin and curry leaves add complexity to your dish. Vadouvan spice has a sweet and smoky taste with mild heat.
In addition to curries, this spice blend is great for marinades. Use it as a dry rub or mix with yoghurt to marinate chicken or fish. The warming spices are delicious in soups and stews with prawns and mussels.
